I’ve been reading a lot about menu planning. Menu planning is something I have done for most of my marriage. Having six children pretty much required it. Imagine if you will, walking into the kitchen at 5 pm, having no clue what you are going to feed a family of eight. It’s a bit daunting. Now I did say “most” if my marriage, because there were times where I just decided to “wing it”. Needless to say, I wasn’t very successful and my family didn’t eat well.

Once again, in keeping up with the challenge we set for ourselves from The 26 Foods You Should Learn to Cook in Your Twenties, we attempted “Perfectly Pan Seared Steaks”. And by “attempted”, I mean we struggled a bit. Mainly because we had a hard time knowing when they were done. My takeaway from this challenge is that I need to trust my meat thermometer.
In keeping with The Cooking Challenge Theme from the 26 Foods You Should Learn to Cook in your Twenties, we decided to tackle Homemade Macaroni and Cheese. I realized very quickly that I have neglected my children’s culinary education when they were hoping we were going to make pasta with Velveeta Cheese on it. They were greatly disappointed when they realized we were going to make it from scratch using REAL cheese!
